Cosmo Cubano

Yield: 1 drink

  • 2 wedges lime
  • 3 sprigs mint, plus 1 extra sprig for garnish
  • 1 1/2 ounces pineapple rum
  • 1 1/2 ounces homemade sour mix (see below)
  • 1 ounce cranberry juice

In a pint glass, hand-press lime wedges with a muddler. Tear 3 mint sprigs and drop in. Fill glass with ice. Add rum, sour mix and cranberry juice. Cap with shaker can and shake vigorously. Strain into a chilled martini glass. Garnish with remaining mint sprig.

Homemade Sour Mix

Yield: 2 cups

Simple syrup

  • 4 cups sugar
  • 1 quart water

Sour Mix

  • 1 cup Simple Syrup
  • 1 cup fresh lime juice or lemon juice

For the Simple Syrup

In a large heavy pan, combine sugar and water. Bring to a boil, stirring to dissolve the sugar. Boil for 2 minutes. Remove from the heat and let cool. Transfer to a clean bottle or container and chill, covered, until needed. (Simple syrup can be made in any quantity you need by combining 1 part sugar and 1 part water and following instructions above. It may be made 2 weeks ahead and chilled, covered.)

For the Sour Mix

In a jar with a lid, combine simple syrup and lime juice or lemon juice, depending on the overall flavor desired for the drink you’re making. Cover and refrigerate for up to 2 weeks, or store in the freezer. (The fresher the sour mix, the fresher tasting the drink will be. It is most ideal if you can combine the simple syrup and juice in the quantity you need right before you start to make your drinks.)
